You should change the oil (or have someone else do it) before storing the bike for the winter. You don't want dirty oil sitting in the engine with acids, sludge, etc., sitting there for 4-6 months eating up your engine's innards. Store it with clean oil, then you're all set to go when the weather warms up.
Clean and wax it before you put it away and cover it with a breathable cover to keep the dust off, not under a plastic tarp to trap moisture.
Check the tire pressure and top them up if necessary,
Don't start it during the winter after you've put it away, just look at it and sit on it every once in a while if you must.
